1. Smoked Turkey
Place some charcoal into the bottom pan of the smoker and light them up. Oil the grate but do it lightly. Take a whole turkey and wash it under cold water, pat it dry and place it in a pan. Add some hickory chips and water to the turkey. Place the turkey in a prepared grate and add two handful of damp chips so you can start cooking.

Preheat your smoker to 225 degrees. Wash and clean the ribs and cut them into smaller pieces. Place the ribs in a large pot and add apple juice to cover. Bring the pot to a boil and remove them from the heat after 15 minutes of boiling. Put oil in the grate of your smoker and place the ribs.
Add a few pieces of garlic cloves into the hot coals and then close the smoker. Smoke the back ribs for about 7 hours while occasionally adding more garlic cloves into the coals. Take the barbecue sauce and add two cups of apple juice that you used for the ribs. Add some granulated garlic and baste the ribs with the mixture every 30 minutes. Continue cooking until the ribs are cooked.
4. Smoked Salmon
Take a pound of salmon fillet and soak it in a brine solution for 4 hours to overnight. Submerge alder wood plants in water and while letting the wood to be soaked, preheat your smoker to 180 degrees F. Remove the salmon from the brine. Rinse it well with water and pat dry. When the fillets are dry, remove the wood planks from the water and lay out the fillets in it. Season with salt and black pepper.
Place the salmon in the smoker and cook it for 2 hours to 2 ½ hours until done. You will know that the fish is done when the fish turns flaky. It should not be salty. The size of the fillets can also affect the smoking time; if they are bigger they might take 2 to 6 hours of cooking. Thirty minutes of the last hour of smoking, take a bowl and mix water and brown sugar. Mix them together until the mixture becomes pasty. Take a brush and apply them evenly on the salmon for added flavor.
